Heat oven to 400 degrees. Season chicken with salt and pepper. Put flour in shallow pan and lightly dredge chicken in it; shake to remove excess.
Swirl oil in large roasting pan and place chicken in. Season chicken with Herbes de Provence. Arrange lemon, shallots, and garlic around chicken, then add vermouth.
Roast for 25-30 min. Baste and roast for another 25-30 min. Garnish with thyme to serve.
If using breasts, use four instead of eight.
